Description
The Clyde Tawny is a toast to Clyde Joseph Dossett, Lurleen’s Father, who imbued all who he met with a love of life and friendship. Nothing was better for Clyde than a pipe and a port shared with family and or friends. Please emulate Clyde and share this special release Tawny with your chosen companions.
REGION: Queensland.
COLOUR: Rich tawny garnet.
NOSE: Sugar and spice and all things nice! Delightful baked and dried berry and plum with notes of toffee and roasted nuts.
PALATE: Lovely balance of fruit, spirit, acid and sweetness. Luscious palate of rich cassis, baked plum, fig and raisin with cigar, truffle and touches of mocha delivering a silky mouth feel and a rich, rounded finish.
WINEMAKING COMMENTS: A rich dessert style of fortified, with very limited fermentation on the crushed grapes permitted before the addition of spirit to create a sweet style. Long maturation in old French oak adds oxidative notes of butterscotch and walnuts.
Making a NV Tawny fortified style is a labour of love and an investment in the future. At Sirromet we use a modified solera system where we periodically re-blend all our fortified barrels to tank, prepare a small batch for bottling, then add fresh new vintage wine to the rest of the reserve batch before returning to barrel for further ageing. This process allows us to maintain the consistency of the style from year to year.
FOOD MATCHING: Plum pudding with crème anglaise or try a glass with some fine dark chocolate.
CELLARING: This style is aged to perfection and will not improve further, however if suitably stored, it will drink well for a few years yet.
